Orange wine: how is it made? Our orange wine was fermented on skins for 20 days in an oak puncheon with wild/natural yeast. The grapes were 70% whole cluster, 30% crushed and de-stemmed. We kept the stems and added them all back in for fermentation. It was then pressed to a stainless steel tank for settling and racked to barrel and stainless kegs. The barrel was a brand new Acacia wood barrel with a light, long toast for 9 months.
