Winemaking:

This Gamay Noir was harvested under ideal conditions and the fruit was hanging clean and ripe on the vines. We destemmed all of the fruit and about 50% of the fruit is crushed, while the other 50% remains whole berry during a 5 day cold soak and afterwards during alcoholic fermentation. Once alcoholic fermentation is complete and the tannin structure is right, we gently press the juice off of the skins and pump it to a settling tank. After settling, the wine is put into specially selected barrels for malolactic fermentation and aging. The wine is sulphured in barrel to preserve the character and fruit and continues to age with careful monitoring for 16 months. Through tasting and blending trials, the Gamay Noir is then taken out of barrels, when ready, and blended into tank. A light filtration is carried out before bottling.

Appearance:

Garnet with a rose petal hue.

Aroma:

Ripe red and dark fruits, black and red cherries, currants and a hint of leather. Sweet aromas of cassis and liquorish are balanced with nuances of tar and spice complimented with toasty oak that round out the characteristics on the nose.

Palate:

A round, fruit-driven palate of fresh strawberry tarts and bolstering acidity with juicy flavours of field berries, a very fruitdriven wine. A medium bodied wine with flavours of ripe cherries, leather, hints of vanilla and a matching tannin structure that supports the mid palate and stands up to the fruity, spicy and toasty flavours. A balanced acidity with a slate characteristic retains youthful grape flavours, along with the subtle layered tannins, supports the backbone of this wine and follows through to the finish. A versatile wine to pair with many styles of food from charcuterie to roasted black cod with lentils or turkey with chestnut stuffing.
