At harvest we picked when the flavours were ideal and the sugars were high. The 2019 Whip’d Red was fermented in small 1-tonne vessels for optimal skin to juice ratio. Different yeast strains were used for complexity and character with best temperatures maintained throughout the fermentation process. After alcoholic fermentation was complete, each batch was gently pressed off of their skins in our Diemme Velvet bladder press, to settle before being racked and transferred to its ageing vessel where the wine went through malolactic fermentation. After malolactic fermentation was complete, blending trials were carried out with particular care.
Garnet with a purple-coloured hue.
A fragrant red wine with red and black fruits. Lifted notes of cherry, raspberries, blueberries, blackberries, cocoa and leather fill the nose. Jammy and spicy with hints of toasted oak and floral notes.
This unique red wine is juicy! There are jammy flavours of both red and black fruits that are complimented by nuances of leather, floral and spice. This medium-bodied red wine is polished, smooth, opulent, round and full of intensity. Flavours of cherry, raspberry and blackberry dance on the palate with cocoa and spice. The mid palate is fruit driven, full and round. The acid and tannins are balanced and leave a refreshing medium length finish. A great wine on its own and paired with many foods.
