Winemaking:
At harvest we decided to pick by flavour and concentration in the grapes. We hand harvested, followed by whole cluster pressing in our gentle bladder press. At the juice tray we tasted the juice to cut off at the exact flavour profile we wanted and did not extract too many phenolic characters form the grape skins and seeds. The juice was cold settled and racked to a clean tank for alcoholic fermentation. Our Foxcroft Riesling is best noted for its balance between sugar and acid, we achieve this through careful monitoring and tasting daily. When the balance and flavours are perfect, we then stop the fermentation by chilling the tank along with the addition of sulphur. Finally, we protein stabilize with the use of bentonite and then filter prior to bottling.
Appearance:
Pale straw with a clear hue.
Aromas:
Fruit driven and concentrated. Honeysuckle, floral notes, citrus and key-lime burst out of the glass. Apricot, white peach and nectarine join the intensely fruity nose and complete the powerful aromas of this Riesling.
Palate:
The palate of this wine reflects the aromatics precisely with a medley of citrus fruits and tree fruits. Concentrated, focused with layers of different fruits with depth and texture. A very balanced and complex Riesling showcasing fruit flavours of zesty lemon, pear, green apple, white peach and apricot compote. The harmony of the zesty acidity and sweetness of the wine, enliven the weight of the mid palate and the full and fruity mouthfeel with a medium-long finish. A very spicy-food friendly wine.
