Winemaking:
This Pinot Noir was harvested under ideal conditions and the fruit was hanging clean and ripe on the vines. We hand
harvested into small picking crates to keep the fruit intact and prevent any unwanted crushing of the berries. For 2018 we destemmed all
the grapes, 50% for our Parke Pinot Noir remained whole berry and the other 50% is crushed berries during a 5 day cold soak and
during alcoholic fermentation. Once alcoholic fermentation is complete and the tannin structure is right, we gently press the juice off
of the skins and pump it to a settling tank. After settling, the wine is put into specially selected barrels for malolactic fermentation and aging.
The wine is sulphured in barrel to preserve the character and fruit and continues to age with careful monitoring. Through tasting and
blending trials, the Pinot Noir is then taken out of barrels, when ready, and blended into tank. A light filtration is carried out before bottling.
Appearance:
Ruby red with a pink hue.
Aroma:
A fragrant Pinot Noir with red fruits jump out of the glass; strawberries, raspberries, ripe cherry and floral notes. Secondary aromas
of leather, toast, forest floor and barnyard are also shown. More subtle notes of blackberries, dried tea leaves, earthiness and spice complete
the profile.
Palate:
A combination of red and black fruits fill the palate as it enters, followed by leather, cherries, and toasty flavours. A balanced and
juicy Pinot Noir with a good acid backbone for support and length on the palate. A medium bodied red with depth and structure, as well
as integrated layers of velvety tannins. A lightly textured mid palate with red fruits, floral notes, forest floor, and toasty oak. A concentrated wine
that evolves and showcases both red fruits and black fruits each time you return to your glass, carrying a spicy, medium length finish. This
wine is best paired with gamey meats like duck or traditional meats BBQ pork.
