Our Underdog Rosé is made from 100% Pinot Noir. These Pinot Noir grapes were harvested specifically for making our Underdog Rosé, which means that we harvested with the perfect balance of acid, sugar and flavours. These grapes were whole cluster pressed in our gentle Diemme bladder press and were pumped to tank or cold settling and clarification, before racking to neutral barrels for alcoholic fermentation. After alcoholic fermentation was complete, we allowed the natural occurrence of malolactic fermentation to take place partially, but not completely. We decided to taste and decide when to atop the secondary fermentation before ageing for 4 months. Finally, the wine was taken out of barrel and blended together back in tank for stabilizing, fining and filtering before bottling.
Dark salmon with a light pink hue.
A fruity, floral and oaky nose with strawberry, sour cherry, candy floss pomegranate and nutty lees notes. Rhubarb and citrus are also in the mix.
A medium-bodied and well-balanced rosé, showcasing jammy red fruits: pomegranate, cherriesm, cranberries and strawberries. The mid-palate is very balanced and smooth, it has light tannin, creaminess and refreshing acidity to support the fruit-driven characters and barrel ageing flavours. The secondary (malolactic) fermentation rounds the wine and adds complexity. There are secondary notes of watermelon, rose petal, aged cheese and grapefruit in this fruit-driven wine.
