Winemaking: These grapes were harvested in mid-September, with specific timing that incorporated fresh fruit flavours and zesty acidity. We hand harvested and whole cluster pressed the grapes in our gentle bladder press. The juice was then cold settled in a stainless tank before racking into a second
stainless tank for a long cool alcoholic fermentation. The tank was temperature controlled and carefully monitored and tasted for balance and fruitiness. Once the wine finished the primary fermentation, it was
transferred to a Charmat tank, where yeast and sugar were added to induce the secondary fermentation. The carbon dioxide produced in the secondary fermentation is captured in the tank and the wine, creating its characteristic bubbles. Finally the wine was carefully filtered and bottled.
Appearance:
A pale straw colour.
Aroma:
A lifted perfumed nose with notes of apple pie, white flower, pear and citrus fruits. Secondary aromas of fresh white peach and starfruit. This fresh and clean wine allows the many succulent fruit aromas to jump out of the glass.
Palate:
Lively bubbles and concentrated flavours of peach, pear, and tree fruits. The palate mirrors the aromas with floral notes, citrus fruits, and hints of guava. A fresh and lively wine, hints of tropical fruits and grapefruit zest. A fruit-forward wine with a mouth-filling mousse of bubbles, zesty acidity, and a medium body that is lively and is full of freshness.
