Winemaking:
Our Underdog Rosé is made from Cabernet Franc and Gamay. These grapes were harvested for specifically making our Underdog Rosé, which means we harvested with the perfect balance of acid, sugar and flavours. The grapes were whole cluster pressed in our gentle Diemme bladder press and is pumped to tank for cold settling and clarification before racking to another stainless steel tank for alcoholic fermentation. We decide by taste when to stop the alcoholic
fermentation to capture the best flavours and balance. Finally the wine was racked to a clean tank for stabilizing, fining and filtering before bottling.
Appearance:
A bright pink colour with a clear hue.
Aroma:
A fresh fragrant nose of fresh picked strawberry, watermelon and pomegranate. Subtle underlying aromas of spring time blossoms and creamy notes.
Palate:
Crisp and refreshing, a well-balanced rose that is well integrated on the palate. The fresh fruit characters are married with subtle leesy flavours and texture. This wine has a balanced acidity showcasing juicy red fruits and candyfloss. A balanced and smooth mid-palate, with a light creaminess and refreshing acidity to support the fruit driven characters. This rose is meant for all day! Drink on a patio and pair with fresh summer salads: strawberry and spinach or a fresh goat’s cheese, endive and pomegranate salad.
