Winemaking:
The 2021 Pinot Gris was a very small batch that we harvested from 2 different vineyards (Lepp and Bock) when the flavours were fully developed and the acidity was just right. We hand harvested to protect the integrity of the fruit and whole cluster pressed in our gentle bladder press. We then cold settled after pressing and racked 50% to a neutral oak barrel for primary fermentation to preserve the fruit aromatics while adding texture. The remaining 50% of Pinot Gris was fermented and aged in stainless steel. Primary fermentation finished and we allowed partial secondary, malolactic fermentation to add texture and complexity during this time. In February wine was barreled-up, and blended with the stainless steel Pinot Gris. After ageing, this wine was protein stabilized, cold stabilized and filtered before bottling.
Appearance:
Pale straw with a clear hue.
Aromas:
An aromatic wine with fresh picked green apples, stone fruits, spice and honeydew melon. Secondary aromas showcasing lemon zest and fresh squeezed citrus, poached pear and honeysuckle flower that fill the glass. A wine with layers of aromas that keeps you reaching to smell more!
Palate:
A balanced combination of fruit and very subtle oak. The flavour profile matches the aromatics with tree fruits, citrus zest and fresh honeydew melon. A light-medium bodied wine with balance, a light mid palate texture and a clean finish. Secondary flavours plums, Bartlett pear and a flinty-mineral note that carries through on a medium long finish. Drink on the patio with friends or pair with a light fish dish, like lemon pepper crusted pickerel.
