Winemaking:
Our 2021 Legacy Pinot Blanc Pét Nat was hand harvested and selected for ripe fruit flavours and balanced acidity. This fruit was treated like a traditional method sparkling, where cuts are made at the press for best quality of juice. The juice was cold settled and racked to stainless steel tanks for fermentation. When the sugar was just right, we racked and cold settled again. We then hand-bottled so the alcoholic fermentation can finish in the bottle. Once the fermentation finished, we did not do any additions, we did not disgorge and we did not add anything. This wine remains on its lees, protected by the natural CO2 to remain a bubbly delight.
Aroma:
Fresh and fruity with many citrus notes. Crisp grapefruit, tree fruits and
honeydew melon. Hints of apple blossom, Bartlett pear and honeysuckle follow.
Palate:
This youthful wine has a palate that matches its aromatics; a medley of citrus and tropical fruits; grapefruit, lemon-lime, apple and pear. Complexities of honeydew melon and orange rind follow. The mid-palate is layered with fruit and slight leesy notes with hints of honey and citrus pith. A fun and young Pinot Blanc showcasing a backbone of acidity and bolstering balance, lots of bubbles and a crisp, medium-long, refreshing finish.
