Winemaking:
This Kirby Vineyard Rosé is made from 100% Gamay Noir from the Kirby Vineyard in the Niagara Lakeshore sub
appellation. The harvest date was chosen when the flavours were ideal and ripe. These
Gamay Noir grapes had a 10 hour skin soak before we took off some of the juice from
the crushed fruit. The juice was pumped to tank for cold settling and clarification before
racking to a secondary tank to start alcoholic fermentation. This delicious rosé was then
racked clean to another tank before a light fining and filtering took place and then we bottled.
Appearance:
Bright strawberry with a clear hue.
Aroma:
A perfumed nose of candy floss, almonds and rose petals. Fresh and lifted aromas of sweet ripe strawberries, cherry lemonade and watermelon. A fragrant and focused rose that is fruit driven and concentrated.
Palate:
Similar to the aromas, the palate is full of ripe and sweet red fruits including strawberry, watermelon, rhubarb, pink grapefruit and almonds. Secondary flavours of candy floss, watermelon and pomegranate follow on the palate rounding out this delicious flavour profile. A clean and fruit focused rose that drinks similar to a white wine with its light body and off-sweet finish. This is your perfect patio sipper and pairs very well with light appetizers, seafood and BBQ chicken.
