Winemaking:
Our 2021 Gamay Noir Pét-Nat was hand harvested and selected for bright acidity and fresh fruit flavours. We de-stemmed
and skin soaked the grapes for 12 hours before pressing to retain colour and a little phenolics. This fruit was treated like a traditional method
sparkling, where cuts are made at the press for best quality of juice. The juice was cold settled and racked to stainless steel tanks for
fermentation. When the sugar was just right, we racked and cold settled again. Our Gamay was then bottled so the alcoholic fermentation
could finish in the bottle. Once the fermentation finished, there were no additions, we did disgorge, however, adding only itself to the top.
NO sulphur added, this wine is protected by the natural CO2 to remain a bubbly delight.

Hazy rose colour with a leesiness and bubbles!
Aroma:
Fresh and fruity with rhubarb, freshly picked strawberry, watermelon and gooseberry notes. Secondary aromas of pomegranate,
plum, candy floss underlay in the glass. A balanced, fresh and fruit-driven young wine.
Palate:
The aromas of this young wine translate into the flavours on the palate. This Gamay Noir Pét Nat is fruit-driven, fresh and has subtle bubbles that creates a unique
wine. Soft red fruits are on the forefront of the palate with notes of freshly picked strawberries, cherry, raspberry and grapefruit rind. Underlying fruit flavours of rhubarb and
pomegranates along with candy notes are subtle. A youthful wine with a light mouthfeel, balanced acidity, an effervescent mid palate and a smooth, clean finish. This natural wine
has not had anything added or anything taken out. This fun, young wine is meant to be served chilled at 6-8°C. A great wine to have on its own or with light dishes and appetizers.
