Winemaking:
The 2021 Estate Riesling was harvested when the flavours were fully developed and the acidity was just right. We harvested our Riesling from each block on the same day and selected our harvest date based on the flavours in the grapes. We hand harvested each block to protect the integrity of the fruit and whole cluster pressed in our gentle bladder press. Juice selection was made at the press pan to ensure there was not any over extraction of phenolic flavours from the grape skins. It was cold settled after pressing and then racked into stainless steel for a long, slow fermentation at cool temperatures, to enhance aromatics and preserve fruitiness. The alcoholic fermentation was stopped when the balance was ideal. Our Riesling was then protein stabilized and filtered before bottling.
Aroma:
Concentrated and focused aromas of citrus fruit zest, apricots and honey fill the glass. A bouquet of honeysuckle flowers, pear, white peach and grapefruit pith add complexity and intensity to this Riesling profile. Hints of guava, gooseberry and notes of green banana are underlying in this concentrated wine.
Appearance:
Very pale straw with a clear hue.
