Winemaking:
The Cabernet Franc and Cabernet Sauvignon for this blend were harvested at separate times with excellent flavour and when the fruit was hanging clean on the vines. We kept each batch separate destemming all of the fruit and about 50% of the fruit was crushed, while the other 50% remained whole berry during a 5-7 day cold soak. Once alcoholic fermentation is complete and the tannin structure is right, we gently press each batch of wine off of the skins and pump it into a settling tank. After settling, each batch of wine is put into specially selected barrels for malolactic fermentation and aging. The wine is sulphured in barrel to preserve the character and fruit and continues to age with careful monitoring for 14 months. Through tasting and blending trials, the Cabernets is then taken out of barrels, and blended into the tank to integrate as the final wine. A light filtration is carried out before bottling.
Appearance:
Dark garnet with a ruby hue.
Aromas:
Plums, blackberries and spice fill the glass. Leather, vanilla, prunes, black currants continue to tantalize your nose, followed by a floral lift of violets and hints of black pepper.
Palate:
The fruit flavours match the aromas on the nose. Blackberries, leather, violets and toasted oak nuances on the forefront. A dry medium to full bodied Cabernet blend with a textured mid palate of toasted hazelnuts, cocoa, black cherries and black currants. Layers of velvety tannins and fresh acidity follow all the way to a focused finish. Lingering flavours of tobacco, black raspberries, prunes and cedar remain on the finish.
