Winemaking

The Sauvignon Blanc grapes were hand-harvested when the flavours were fully developed and the acidity was just right. We selected our harvest date based on the overall ripeness and flavours and pressed in our gentle bladder press. The Juice was cold settled and racked into stainless steel for a slow fermentation at cool temperatures to enhance aromatics and preserve fruitiness. The alcoholic fermentation was encouraged to go dry and the wine was aged on it its primary lees. 50% of the wine was aged for 6 months in a neutral French oak barrel. We frequently agitated the tank to keep the lees in suspension and add mid-palate texture and creaminess. Sauvignon Blanc was then protein stabilized, cold stabilized and filtered before bottling
