Winemaking
Hand harvested, crushed and destemmed into small batch vessels for a cold
soak and then alcoholic fermentation. After fermentation the Pinot Noir was pressed off to settle, and then racked into French Oak barrels where it aged for 10 months to gain complexity and integrate layers of fruit and tannin. Through blending trials, barrels were selected to be blended together into tank and lightly filtered before bottling.
