This Pinot Noir was harvested under ideal conditions and the fruit was hanging clean and ripe on the vines. We hand harvested into small picking crates to keep the fruit intact and prevent any unwanted crushing of the berries. Our Pinot Noir is then destemmed and about 50% of the fruit is crushed, while the other 50% remains whole berry during a 5 day cold soak and during alcoholic fermentation. Once alcoholic fermentation is complete and the tannin structure is right, we gently press the juice off of the skins and pump it to a settling tank. After settling, the wine is put into specially selected barrels for malolactic fermentation and aging. The wine is sulphured in barrel to preserve the character and fruit and continues to age with careful monitoring. Through tasting and blending trials, the Pinot Noir is then taken out of barrels, when ready, and blended into tank. A light filtration is carried out before bottling.

A very aromatic Pinot Noir with fresh raspberries, sweet cherries, red currents, blackberries and spice. Secondary notes of violets, leather and sage round out this intense and fruit forward wine.
A reflection of the aromas on the nose with raspberries, sour cherry and red currents on the forefront of the palate. An elegant wine with an intense, tight focus from start to finish. Layers of soft and integrated tannins fill the mid palate with flavours of cocoa, leather and toastiness. A medium bodied Pinot Noir that carries secondary characters of violets, lavender and sage on the medium-long finish.
