This Pinot Noir was harvested under ideal conditions and the fruit was hanging clean and ripe on the vines. We hand
harvested into small picking crates to keep the fruit intact and prevent any unwanted crushing of the berries. Our Pinot Noir is
then destemmed and about 50% of the fruit is crushed, while the other 50% remains whole berry during a 5 day cold soak and
during alcoholic fermentation. Once alcoholic fermentation is complete and the tannin structure is right, we gently press the juice off
of the skins and pump it to a settling tank. After settling, the wine is put into specially selected barrels for malolactic fermentation and aging.
The wine is sulphured in barrel to preserve the character and fruit and continues to age with careful monitoring. Through tasting and
blending trials, the Pinot Noir is then taken out of barrels, when ready, and blended into tank. A light filtration is carried out before bottling.

A concentrated Pinot Noir with sweet black cherries, leather and spice. Secondary notes of jammy brambleberry, blackberry, toast
and earthy complexity round out this intense and fruit driven wine.
Ripe black fruits and a tight focus of flavours: spicy clove, earth and tar are on the forefront of the palate. A wine with great
intensity with elegance and a focused palate from start to finish. Layers of smooth tannins and balanced acidity fill the mid palate with
flavours of both black and red fruits, leather and toastiness. A medium bodied and fruit focused Pinot Noir with many complexities
that carries secondary characters developing through the medium-long finish. This wine pairs well with duck and most game birds like
pheasant or quail.
