Winemaking:

This Pinot Noir was harvested under ideal conditions when the fruit was hanging clean and ripe on the vines. We hand-harvested it into small picking crates to keep the fruit intact and prevent any unwanted crushing of the berries. Our Pinot Noir is then de-stemmed and about 50% of the fruit is crushed, while the other 50% remains whole berry during a 5 day cold soak and during alcoholic fermentation. Once alcoholic fermentation is complete and the tannin
structure is right, we gently press the juice off of the skins and pump it to a settling tank. After settling, the wine is put into specially selected barrels for malolactic fermentation and aging. The wine is sulphured in barrel to preserve the character and fruit and continues to age with careful monitoring. Through tasting and blending trials, the Pinot Noir is then taken out of barrels, when ready, and blended into tank. A light filtration is carried out before bottling.

Appearance:

Ruby red with a pink hue.

Aroma:

A concentrated Pinot Noir with ripe raspberries, sweet cherries, red currants and spice. Secondary notes of leather, lavender and spice round out this intense and fruit-forward wine.

Palate:

Ripe red fruits and a tight focus of flavours; sour cherry, strawberry-rhubarb, pomegranate and red currants on the forefront of the palate. A wine with great intensity and a tight focused palate from start to finish. Layers of tannins and structure fill the mouth and a mid palate with flavours of cranberry, leather and toastiness. A medium-bodied and fruit-forward Pinot Noir with grip that carries secondary characters of violets, lavender and toasted cedar on the medium-long finish.
