Winemaking:

This Gamay Noir was harvested under ideal conditions and the fruit was hanging clean and ripe on the vines. We de-stemmed all of the fruit and about 50% of the fruit is crushed, while the other 50% remains whole berry during a 5 day cold soak and afterwards during alcoholic fermentation. Once alcoholic fermentation is complete and the tannin structure is right, we gently press the juice off of the skins and pump it to a settling tank. After settling, the wine is put into specially selected barrels for malolactic fermentation and aging. The wine is sulphured in barrel to preserve the character and fruit and continues to age with careful monitoring for 15 months. Through tasting and blending trials, the Gamay Noir is then taken out of barrels when ready, and blended into a tank. This Artist Series Gamay Noir was from 2 very special selected barrels whose quality and balance was above and beyond all the others. A light filtration is carried out before bottling.

Appearance:

Garnet with a pink hue.

Aroma:

Concentrated aromas of toast, cocoa, dried black cherries. Complex notes of raisins, roasted almonds, vanilla and blackberries on the nose. The secondary aromas in this wine continue to develop and change as the wine ages in bottle.

Palate:

A well balanced and intricate palate of fruit, oak and subtleties. Textured and complex flavours continue to develop on your palate every time you take another sip. A medium-full bodied Gamay Noir with layers of soft tannin structure and a full mouthfeel. Black and sour cherries, chocolate, leather and toast are rich in depth and carry through to the long finish. This specially selected Gamay Noir is integrated and meant for aging.
