Winemaking: These grapes were harvested by hand with specific timing that incorporated ripe fruit flavours and fresh acidity. We hand
harvested, 70% remained whole cluster and 30% was crushed and destemmed with the stems added back for primary fermentation.
Alcoholic fermentation was carried out on a neutral puncheon for a 21 days on the skins before we pressed the grapes in our gentle
bladder press. A long, slow press cycle was used to allow maximum juice yield without compromising flavour extraction. The juice was
cold settled in a stainless tank before racking into barrels for malolactic fermentation. The barrels were carefully monitored and tasted
for 5 months. No sulphur additions took place. After aging was complete, it was blended back into tank. This special blend had no fining
and no filtering to preserve the wine without stripping the flavours and textures, before hand bottling.
Appearance: Hazy amber with an amber hue.
Aroma: Notes of bee’s wax and creamed honey are on the forefront of the aromas. Followed by orange marmalade, dried tea
leaves and quince. Hints of banana flambé and caramel are underlying.
Palate:A rich and full palate of flavours that mirrors the aromas. Flavours of orange rind, unsweetened tea, apricot and hazelnut dance
on the palate. A balanced, medium-bodied, skin contact white wine with textured and layered tannins that linger on the finish.
A complex and food friendly wine, this orange wine is a patio pleaser and pairs best with chicken club sandwiches, mozzarella sticks
and Caesar salad. This natural wine is vegan friendly.
