Winemaking: :Our 2020 Estate Pét-Nat wash and harvested early and selected for bright acidity and fresh fruit flavours and pressed in our gentle bladder press the same day. This fruit was treated like a traditional method sparkling, where cuts are made at the press for best quality of juice. The juice was cold settled and raked to stainless steel tanks for fermentation. When the sugar was just right, we racked and cold settled again. Our fermenting wine was then bottled so the alcoholic fermentation could finish in the bottle. Once the fermentation finished, we did not do any additions, we did not disgorge and we did not add anything. This wine remains on its lees, protected by the natural CO2to remain a bubbly delight!
Appearance:
Straw with a leesy haze and lots of bubbles!
Aroma:
Fermentation aromas on the forefront with leesy notes of flint that blow off quickly. Underlying aromas of apple, green pea, lemon rind and hints of honeydew melon
Palate:
This is a crisp and naturally balanced wine with flavours on the palate similar to the aromas. Flavours of grapefruit pith, key lime pie and notes of minerality. The mid-palate showcases a leesy texture with a vibrant acid backbone for structure. A fruit-forward, fun and fresh styled Pét-Nat that will gain complexity in bottle on the lees. This wine is full of refreshing fruit flavours and a medium, off-dry, clean long finish
