Winemaking:
At harvest we picked when the grapes were mature and flavours were ideal. The 2018 Whip’d White blend grapes were gently pressed by separate batches in our Diemme Velvet bladder press. The Muscat grapes were the first to pick for their intense aromas and flavours. The Chardonnay and Riesling were the second grapes to be picked and processed for their acidity and freshness. The Vidal grapes were next picked with rich and ripe flavours without compromising the acidity and balance. Finally the Gewürztraminer was last to be harvested with intense fruit flavours and concentration. Each batch was gently pressed, then cold settled in tank before the clean juice was racked off, kept separate and inoculated for alcoholic fermentation. Each grape variety received a specific yeast selected to enhance the varietal character and preserve fruitiness and freshness. When the fermentation is complete the wines are preserved and the blending trials begin. Once the final blend is chosen, the exact percentage of each variety is proportionately added to the blending tank to create the final wine. The Whip’d White blend is then cold stabilized, bentonite clay fined and filtered before bottling
