Winemaking:
This Kirby Vineyard Rosé is made from 100% Gamay Noir from the Kirby Vineyard in the Niagara Lakeshore sub
appellation. The harvest date was chosen when the flavours were ideal and ripe. These
Gamay Noir grapes had a 10 hour skin soak before we took off some of the juice from
the crushed fruit. The juice was pumped to tank for cold settling and clarification before
racking to a secondary tank to start alcoholic fermentation. This delicious rosé was then
racked clean to another tank before a light fining and filtering took place and then we bottled.
Appearance:
Bright cheery with a clear hue.
Aroma:
A very berry rosé! Fresh and lifted aromas of sweet ripe of strawberries, cherry lemonade and candy floss. A fragrant
and focused rosé that is fruit-driven and concentrated. Secondary aromas are subtle
and quietly show themselves as the wine wine opens and evolves.
Palate:
Similar to the aromas, the palate is full of red fruits including sour cherries, watermelon, rhubarb, pink grapefruit and red
delicious apples. A clean and refreshing rosé that drinks similar to a white wine with its light
body and dry finish. An acid-driven rosé with bright fruits for balance, a tight focused palate
and salivating finish. This is your perfect patio sipper and pairs well with light appetizers,
seafood and salads.
