Winemaking:
The 2018 Vidal Special Select Late Harvest was harvested at -12°C and pressed the same morning. We hand-harvested to protect the integrity of the fruit and whole cluster pressed a long and slow cycle to gently extract as much concentration of flavours possible. The Vidal Special Select Late Harvest was cold settled after pressing and then racked into stainless steel for a long,slow fermentation at cool temperatures, to enhance aromatics and preserve fruitiness.Fermentation finished timely this vintage and the wine was protein stabilized and filtered before bottling.

Aromas:
A very perfumed and concentrated wine with dried fruits and tropical fruits that fill the glass. A fresh, ripe medley of pineapple, peach, apricot and honeycomb awaken the senses. Secondary perfume of floral notes, honeysuckle and ginger spice complete the aroma profile.
Palate:
:A perfect match to the aromas, rich with citrus fruits, honey, peach and quince when entering the palate. This Vidal Special Select Late Harvest is fresh, full and is very fruit-driven. Notes of peach, tangerine,honeysuckle and apricot are layered with rich texture and balance. It is balanced and round on the palate with refreshing acidity to match the sweetness. A medium-bodied wine with a long finish that lingers on the palate. This dessert wine drinks well on its own and pairs with many cheeses and desserts.
