These grapes were harvested by hand, very early in September, with specific timing that incorporated ripe fruit flavours and fresh acidity. We hand harvested and whole cluster pressed the grapes in our gentle bladder press. A long, slow press cycle was used to allow maximum juice yield without compromising flavour extraction. The juice was cold settled in a stainless tank before racking into a second stainless tank for alcoholic fermentation. The tank was temperature controlled and carefully monitored and tasted for balance and fruitiness, before chilling and adding sulphur to stop the fermentation process. Fining for protein stability and filtration were completed to preserve the wine
without losing the flavours and textures, before bottling

A fruity and floral palate that has subtle layers of flavours that impress from your first sip to the tip of your tongue. A medium weight on the mid-palate providing flavours of orange peel, perfume, bergamot and citrus zest. A fruit forward wine with a light texture and freshness. A medium length finish with hints of citrus fruit and lingering honeysuckle.
