The 2017 Pinot Gris was a very small batch that we harvested when the flavours were fully developed and the acidity was just right. We hand harvested to protect the integrity of the fruit and whole cluster pressed in our gentle bladder press. We then cold settled after pressing and racked into 2 used barrels and 1 new oak barrique for a harmonious fermentation of fruit and oak at cool temperatures and to enhance aromatics and texture. Primary fermentation finished and we allowed partial secondary, malolactic fermentation to add texture and complexity during this time. In January, wine was barreled-up, after 4 months ageing, then was protein stabilized, cold stabilized and lightly filtered before bottling.

Light straw with a clear hue.

An aromatic wine with fresh baked apple pie, vanilla, spice and honeydew melon. Secondary aromas of citrus, pear and toasty notes that fill the glass.

A textured and fruit-driven palate with plums, honey, apple and pear when entering the palate. Underlying flavours of lemon, fresh-baked croissants and butter. A balanced wine with a smooth texture and integrated oak is notable on the palate. The oak influence is integrated with the fruit, spice and light buttery creaminess from the malolactic fermentation. A fruit-driven wine with a round mid-palate and a long, lingering finish. A very pleasant light-medium bodied wine that pairs with many styles of food.
