This Gamay Noir was harvested under ideal conditions when the fruit was hanging clean and ripe on the vines. We de-stemmed all of the fruit and about 50%
of the fruit is crushed, while the other 50% remains whole berry during a 5 day cold soak and afterwards during alcoholic fermentation. Once alcoholic fermentation is complete and the tannin structure is right, we gently press the juice off of the skins and pump it to a settling tank. After settling, the wine is put
into specially selected barrels for malolactic fermentation and aging. The wine is sulphured in barrel to preserve the character and fruit and continues to age with careful monitoring for 15 months. Through tasting and blending trials, the Gamay Noir is then taken out of barrels, and blended into tank. A light filtration is carried out before bottling.

Very intense aromas of black cherries, blueberries and blackberries. Floral notes, black licorice, toast and brambleberries round out the characteristics on the nose.
A full, round, fruit-driven palate from start to finish. Juicy, and fruit-driven with flavours of field berries, leather, cherries and dried tobacco. A medium-bodied wine with medium tannin structure that supports the mid palate and stands up to the fruity, earthy, spicy and toasty flavours. Balanced acidity retains
youthful grape flavours, along with the tannins, supports the backbone of this wine and follows through to the finish. This medium-long finish holds dried cherries, raisins, leather and licorice. A versatile wine to pair with many styles of food from sweet to spicy and white and red meats alike.
