The Cabernet Franc and the Cabernet Sauvignon for this blend were harvested at separate times with excellent flavour and when the fruit was hanging clean on the vines. The Petit Verdot was harvested separately and dried in our kilns to increase concentration and sugars. We kept each batch separate, de-stemming all of the fruit. About 50% of the fruit was crushed, while the other 50% remained whole berry during a 5-7 day cold soak. For both grape varieties, we warmed up the fruit afterwards for alcoholic fermentation, Once alcoholic fermentation was complete and the tannin structure was right, we gently pressed each batch of wine off of the skins and pumped it into tank for settling. After settling, each batch of wine was put into specially selected barrels for malolactic fermentation and aging. The wine was sulphured in barrel to preserve the character and fruit, and continued to age with careful monitoring for 14 months. Through tasting and blending trials, the Cabernets is then taken out of barrels when ready, and blended into tank to integrate the final wine. A light filtration is carried out before bottling.

Prunes, plums, blackberries and spice fill the glass. Leather, vanilla, blackcurrants continue to tantalize your nose, followed by a floral lift of violets, aniseed and hints of brambleberries.
The fruit flavours that enter your palate match the aromas on the nose: blackberries, leather, violets and toast on the forefront. A medium-bodied to full-bodied Cabernet blend with a textured mid-palate of toasted hazelnuts, cocoa, black cherries and black currants. The many layers tannins and fresh acidity follow all the way to the med-long, focused finish. Lingering flavours of tobacco, black raspberries, prunes and toast remain on the finish. Secondary complexities persist in the background of this wine and will continue to develop and integrate over time.
