The 2018 Pinot Gris was a very small batch that we harvested when the flavours were fully developed and the acidity was just right. We hand harvested to protect the integrity of the fruit and whole cluster pressed in our gentle bladder press. We then cold settled after pressing and racked to a neutral oak barrel for primary fermentation to preserve the fruit aromatics while adding texture. Primary fermentation finished and we allowed partial secondary, malolactic
fermentation to add texture and complexity during this time. In March wine was barreled up, after 4 months ageing, then was protein stabilized, cold stabilized and lightly filtered before bottling.
Light straw with a bright clear hue.
An aromatic wine with fresh baked apple pie, vanilla, spice and honeydew melon. Secondary aromas of citrus, pear and toasty notes that fill the glass.
A balanced combination of fruit and oak. The flavour profile matches the aromatics with tree fruits, toast and integrated tannins. A medium-bodied wine with a round textured mid palate and a buttery-creamy finish. Secondary flavours plums, baking spice, vanilla and lemon zest carry through on a medium long finish. Drink on the patio with friends or with a light fish dish.
