Our 2015 Wild Ferment Chardonnay has just been released! This is a special wine because as its name implies, we left this wine in as close to its natural state as possible, because, according to (our Winemaker) Shauna, “It was just that good.” It was barrel-fermented with indigenous yeast, also known as wild yeast and barrel-aged for 10 months on its primary lees. It naturally went through malolactic fermentation and had lots of stirring to make it creamier and more full-bodied.
There were only two barrels made, and those barrels were 100% French and 50% New Oak. The barrels were racked, blended and sulphured (the only additive used in this wine). They were not fined or filtered.
This wine is very stable, complex, versatile and bone dry. Pair with shellfish, risotto or cheese to really enhance your experience.
